At just under 8 years old, this one leads much more lively and herbaceous on the nose, with plenty of caramel, plum, raisin, and fresh aak before a slow, subtly charred chocolate cream. The longer it rests in the glass the more it begins to smell like root beer float – and if that isn’t an enticing note, I don’t know what is. 

The palate is gripping, but doesn’t show it’s full, nearly 150 proof, attitude.  Sweet oak is prominent, surrounded by tons of caramel and pudding pop, and dark berry sweetness engulfed in big granny smith apple and lemon oil brightness. Underneath is plenty of herbal, digestif-like nips, not quite as one-dimensional as licorice can be in part due to how creamy and clinging the sweeter notes are over top.

If IPA ice cream were a thing, it would probably taste like this finish. The finish is long, citrusy, and hoppy, but transition into long, tingly, and spiced creaminess that lasts well into the long finish.
